Food tech company Armored Fresh (CEO: Luna Oh) has developed a new cheese taste evaluation protocol called 'TAPS (Taste Analysis Protection Solution)', which digitally captures unique information about the taste, texture, and aging level of representative cheeses worldwide.

Armored Fresh's internally developed program 'TAPS (Taste Analysis Protection Solution)', through their R&D center, is a system that enhances the taste and flavor of their own vegan cheese to a superior level, surpassing conventional animal-based cheeses, in order to replicate the unique taste of cheese. It aims to secure the taste, aroma, texture, patterns, and aging level of various representative cheeses such as Cheddar, Gouda, Romano, and Gorgonzola, which are globally produced in large quantities. These parameters will be utilized as criteria for new product development and quality evaluation.

With the development of this program, Armored Fresh has established a more efficient and objective system for vegan cheese production. By basing the comparison and evaluation of taste on data rather than subjective judgment by developers, they are now able to maintain consistent taste and flavor across all their products. Furthermore, by providing more detailed and advanced evaluation metrics during the manufacturing process, they expect to significantly contribute to quality enhancement and improvement.

Yongkook Park, Director of Armored Fresh R&D Center, said, "We have developed a program that will help us develop high-quality vegan cheese based on proprietary data that determines the quality of cheese, in order to meet the increasingly discerning tastes of consumers in the alternative food market." Meanwhile, Armored Fresh entered the global alternative food market last year, starting with the United States, with its self-developed "vegan cheese" based on almond milk. They have been actively expanding their overseas business with their vegan cheese, which has significantly improved upon the taste and texture shortcomings of traditional vegan cheese. They are also actively pursuing the expansion of their global distribution network.

From the 14th to the 15th of this month (local time), Armored Fresh will participate in the "KeHE Holiday Show" hosted by KeHE, the most influential food and beverage distribution specialist in the United States. They will showcase the superiority and competitiveness of their products to global buyers. Towards the end of this month, they are also scheduled to meet with local consumers at over 170 stores of Kroger, a globally renowned large-scale retailer known for its rigorous product selection process.
